oz unsalted butter
tsp vanilla essence

oz egg white

oz all purpose flour
Instructions
1: Whip the butter with the powdered sugar until pale. 2: Add egg whites and vanilla essence, whip again until slightly fluffy and stiff. 3: Sift in the flour and cocoa powder, mix with a rubber spatula until well combined. 4: Transfer the batter into a piping bag and cut the tip of the bag. 5: Shape the batter on a silpat, flatten with a spoon, then add sliced almonds and cocoa nibs on top. 6: Bake with top and bottom heat at 130°C for 30 minutes. 7: Remove from the mold, cool on a rack, then store in a container or jar, and serve.View original recipe
